Chicken Salad Recipe with Grapes
Last month I went to an event at my girlfriend’s home and she had these simple {and cute} chicken salad sandwiches made with mini croissants. It made me realize how much I miss having a good chicken salad for lunch either on a sandwich or over some lettuce {and a sprinkle of oil and red wine vinegar}.
When I lived in Virginia my girlfriends and I used to hit Panera from time to time and I would grab their Napa Almond Chicken Salad Sandwich to go with my soup. Yum…
Panera: All-natural, antibiotic-free chicken, diced celery, seedless grapes, almonds and our special dressing served with lettuce and tomato on our Sesame Semolina bread.

In trying to figure out how to do a true copycat recipe I viewed the ingredients they list – holy smokes, there’s a lot for me to pick through! I removed a lot of the non-essential items so I don’t bore you and make you want to leave.
Napa Almond Chicken Salad on Sesame Semolina
Citrus & pepper chicken, sea salt, dehydrated garlic, dehydrated onion, sugar, dry lemon peel, spices, dehydrated rosemary, dehydrated basil, paprika, vinegar, tomatoes, dressing, rosemary extract, mustard oil], fresh red seedless grapes, lettuce, celery, sliced raw almonds, salt, black pepper.
The dressing didn’t give a lot of info so I am using just a basic Miracle Whip and doctoring up the recipe with herbs, spices, and vinegar.
I am using a canned chicken rather than cooking and cubing my own. Sorry… it’s that kind of lunch day for me {quick and easy, which might be what you want too}.

Chicken Salad with Grapes

Ingredients
- 1 12.5 ounce can chicken breast
- 1/3 cup celery, finely chopped
- 2 tablespoons shallot, finely chopped
- 1/2 cup grapes, halved and quartered
- 1/3 cup Granny Smith Apple, diced
- 1/4 cup Miracle Whip
- 2 teaspoons red wine vinegar
- 1 tablespoon lemon juice
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon Italian seasoning
- salt and pepper to taste
- 1/4 cup slivered almonds
Instructions
- Chop celery, shallot, grapes, and apple
- Add the chopped mixture and the almonds to the bowl with chicken
- Whisk together Miracle Whip, red wine vinegar, lemon juice, and spices
- Add chicken to bowl and toss until coated
- Salt and pepper to taste
- Serve over lettuce or on your favorite bread
