Thai Peanut Sauce

Ingredients
- 1 clove garlic, finely minced
- 1 cup coconut milk
- 1 cup creamy peanut butter
- 2 teaspoon yellow curry powder
- 3 tablespoon light brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon white vinegar
- 2 tablespoon fresh ginger, grated
- 2 teaspoon sriracha sauce
Instructions
- Using a medium pot, slighty sautee the garlic for 1 minute
- Add all the remaning ingredients to the pot and cook on low until it starts to boil
- Constantly whisk while waiting for the mixture to heat up.
- Remove the pot from the heat
- Allow the sauce cool down to room temperature.

I love a good Thai peanut sauce to dip my chicken skewers in or chicken nuggets or …. my newly found love that I am trying to replicate which is Cafe Zupas Thai Peanut Chicken sandwich. I have to admit I have eaten “several” times {cough cough} since the Summerlin location opened and each time I get the same thing.
Yes, it’s only a 15 minute drive but that gets old fast just to go for a sandwich so I decided to try to replicate the recipe and have extra fixings on hand for when I get a hankering!

If you are looking for a simple Thai peanut sauce recipe, then try the on below to use for grilled chicken or whatever you want to use it for. I actually eat it by itself at times like it is just regular peanut butter… sssshhh, it’s weird I know.
Note the following:
- This will keep in the refrigerator for a while {how long I don’ t know because it never last long enough to find out since we eat it!}
- It will thicken the longer it sits in the refrigerator and to thin it out just heat it up
- If you don’t like spicy then cut back on the curry, ginger and sauce and add until you get your “taste”
