This Chipotle Restaurant Chicken Recipe is better if you have time to plan it and let it sit overnight in marinade. If not, piercing the skin and letting it sit for a few hours does the trick too.

I will either use my indoor grill or panini pan with a bacon press to cook mine but if you don’t have a press, don’t sweat it.

According to the Chipotle website their chicken includes:

Chicken , Water, Chipotle Chile, Rice Bran Oil, Cumin, Garlic, Oregano, Black Pepper, Salt – In Chipotle restaurants with a plancha grill we add a drizzle of honey to our Chicken marinade.

The latest can of chipotles I used didn’t have much adobe in it so I used one of the large peppers for flavor.

Chipotle Restaurant Chicken Recipe

Ingredients

  • 2 pounds of chicken thighs, boneless and skinless
  • 1 (2 ounce) package dried ancho chiles
  • 1 (7 ounce) can chipotle pepper in adobo sauce (discard chipotle peppers, skim out seeds)
  • 1/2 teaspoon chili powder
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons cumin powder
  • 2 tablespoons fresh oregano, chopped
  • 6 cloves garlic
  • 1 red onion, quartered
  • 1/4 cup oil (canola/vegetable/olive)
  • 3 tablespoons lime lime juice

Instructions

  1. Add the dry chilies to a bowl of hot water and soak until soft and then remove the seeds.
  2. Add chilies and the other marinade ingredients into food processor and puree until smooth.
  3. Pierce the chicken multiple times so the chicken absorbs the marinade.
  4. Spread marinade over chicken and marinade for at least one hour up to overnight
  5. Grill on medium high on an indoor grill where the chicken can be pressed flat {I used my indoor grill / bacon press}
