Easy Chicken and Dumplings
Being from the south you grow up on southern recipes like chicken and dumplings.
It’s been a while since I have made them so I started researching recipes and found nothing that sounded like my grandmother’s chicken and dumplings.

I see so many people cooking them in the slow cooker but I have yet to brave to that method and stick with what I know… stove top. But, the recipes had tons of vegetables in them, clumps and lumps of biscuits, etc. – do these folks not know what southern chicken and dumplings look like! So, I begged my sister for my grandmother’s recipe and she gave me her own, which is so incredibly easy you won’t believe that there are only a few ingredients in them!

Roll out the biscuits until they are paper thin then using a pizza cutter, slice them into 1″ wide x 1 1/2″ long pieces.
The key here is VERY THIN and use LOTS of FLOUR. This will help the dumplings not taste to “doughy” and the flour will help act as a thickener for your broth.
I like to use a vegetable peeler to slice my carrots into thin strips and then chop the strips {I don’t like chunks of carrots in my soups}.
Once all the dumplings are dropped into your hot broth, add the chicken, onions, carrots, and then season to taste.
I don’t use a lot of salt in my recipes and I feel this recipe needs more than most so be sure to taste it before serving.

Easy Chicken and Dumplings

Nothing screams comfort food like Southern Style Chicken and Dumplings. Below is my sister's recipe that is her family's favorite.
Ingredients
- 1 fatty chicken, whole with skin
- 1 can Pillsbury flaky biscuits
- 1 tablespoon olive oil
- 1/2 cup onion, white & chopped
- 1/3 cup carrots, finely chopped
- salt and pepper to taste
Instructions
- Cut the whole chicken into pieces and add to large stock pot and cook on low for about an hour or until chicken is done
- Once the chicken is done, remove chicken from broth and turn to medium heat to until you have a rolling boil
- Open biscuits and roll them until they are paper thin. {The dough will be about the size of a dinner plates.} NOTE: Use a lot of flour to roll the biscuits to act as the thickener
- Using a pizza cutter to cut into 1/2" wide x 1 1/2" long strips
- After you cutting the biscuits, toss them in flour again
- Drop 2 - 3 dumplings at a time making room with a spoon as the pot becomes full.
- Pull the chicken and add to the pot
- In a separate pan, sautee the onions and carrots in 1 tablespoon olive oil until softened
- Once the onions and carrots are softened, add to the pot and cook for about 15 minutes
- Salt and pepper to taste
