Years ago when we lived in Turkey I read an article about grilling pizza and that time, grilled pizzas were “way gourmet.” One dinner party I had we made them and everyone was “oooooed and aaahhhhed” over our amazing pizzas. What a clever idea they said – LOL.
Amazing how something so simple can change the taste of something so drastically. Since then, grilling the pizza crust is the only way we will eat them! {Or until I get a brick oven in my backyard.} Normally I will grill our pizzas outside but since I have been sick, I didn’t want to deal with the grill and cheated by using our indoor grill.
Each family member has their own version they like: Spencer likes barbecue chicken pizza, Alex is alfredo or just oil with NO CHEESE!!!, and Bob and I prefer roasted vegetables for ours.
Spencer’s barbecue chicken pizza {minus the typical red onion and cilantro}. I bake chicken in a mixture of barbecue sauce and water then shred the chicken. Once shredded I add to the pizza using barbecue cause as the substitute for pizza sauce {almost like California Pizza Kitchen}.
I set up a line of all of our favorites, which below is what I normally make for Bob and me:
- Homemade Pizza Dough
- Roasted Eggplant
- Roasted Garlic
- Roasted Peppers – read How to Roast Peppers
- Caramelized Onions
- Caramelized Mushrooms
- Herbed Feta Cheese {I make my own with Italian seasoning and plain feta crumbles}
Yum! My favorite part of this pizza is the roasted peppers, caramelized onions, and feta together.
A fun idea for a party is to line up all the ingredients and have the grilled crusts ready and have your guests go down the line to create their pizza masterpiece. Once complete, toss into the oven to warm up all the ingredients and enjoy!
