Mexican Fiesta Dinner With Classico Family

How many times have you mentally set your dinner plans only to find out that you are missing a key ingredient? You know the night when everything is due tomorrow for school, husband is working late, and you look at yourself in the mirror and mmble “I am not walking out that door.”

Most of the time your key ingredient can be substituted with other items from your pantry and below is my discovery of using “pasta sauce” as a substitute for several tomato based ingredients.

First, let me preface this article by sharing that I stockpile food. I am not a hoarder but when I can find a great deal on foods we use a lot of I buy multiples. If you look in my canned food pantry you will normally find vegetable broth, chicken broth, canned tomato paste, canned tomato sauce, etc.

One night I was preparing a dish that required tomato sauce and the shelf was bare of both paste and sauce! I scoured the shelves to see if I could find a rogue can and came up empty. But… guess what caught my eye… a jar of pasta sauce!

Once I started thinking about it, it would be much cheaper for me to use the jar of pasta sauce than the canned tomato sauce and once the dish was prepared… you couldn’t tell the difference! Another bonus of my discovery was that usually I only need a fraction of what is actually in the can and it normally goes to waste but with a jar… screw the lid back on and in the fridge it goes to be used for another dish.

I will buy one jar and use it for several dishes, such as Fideo Soup, Mexican Rice, chicken, and more. Don’t be shy to use a pasta sauce for more than pasta! You can get your Classico Family Pasta Sauce at Walmart, in several varieties.

Mexican Rice

Mexican Rice

Ingredients

  • 3 tablespoons vegetable oil
  • 1/4 cup chopped onion, chopped
  • 2 tablespoons green pepper, finely chopped
  • 1/4 cup carrots, chopped
  • 1 cup uncooked long-grain rice
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • Fresh corn on the cob removed from cob
  • 1/2 cup Heinz Classico sauce {I prefer the traditional}
  • 2 cups chicken broth
  • juice of 1/2 lime

Instructions

  1. Heat oil in a large pan over medium heat and add onion, pepper, and carrots
  2. Sautee lightly and set aside
  3. Using the same pan add rice and cook the rice until it starts to turn a golden color.
  4. Add cumin and salt
  5. Stir in vegetable mixture and corn
  6. Add chicken broth and stir well.
  7. Add Heinz Classico sauce and stir well
  8. Bring to a boil.
  9. Reduce heat to low, cover and simmer for 20 to 25 minutes.
  10. At the end squeeze in the lime juice and mix well.
  11. Fluff with a fork.
  12. Garnish with chopped tomatoes and cilantro
