My goal was to take this opportunity to catch up with some girlfriends for dinner and cocktails but that didn’t work out as most of them are on their awesome vacations or couldn’t get a sitter.
I can’t do cocktails as I just started one of those dang prescriptions drugs that don’t mix well with anything, especially alcohol. Disappointing as I wanted to try their new cocktail on the seasonal menu, Pink Cherry Cosmo – Absolut Citron Vodka and Cointreau Liqueur with fresh lime juice and cranberry juice garnished with a Pink Blush cherry. Doesn’t that sound refreshing!?
Since Spencer is almost 20 and starting his sophmore year in college I thought this would make a great opportunity to catch up with our man cub.

If you know me you know that I am a caprese salad addict! PF Chang’s has their version which is the Heirloom Tomato Salad – Market-fresh heirloom tomatoes, avocado, Thai basil and zesty ponzu dressing. If you buy heirloom tomatoes then you will realize the BARGAIN that this dish is because there were a lot of heirloom tomatoes in this dish.

For lunch I decided to try PF Chang’s Chiang Mai Curry Noodles with Chicken – Sliced chicken breast wok-tossed with egg noodles, Fresno peppers, cilantro and a coconut-curry infused broth, garnished with Brussels sprouts and topped with crispy wontons.
