Ranger Cookies
I will often go to restaurants and taste something I really love and then try to replicate it at home experimenting with the perfect recipe. Or, I will take several recipes I find in magazines or cookbooks and tweak them to my liking to make them “my own.”
When I first stumbled across this ranger cookie recipe, I know I had found the Best Chocolate Chip Cookie Recipe ever. I find it absolutely PERFECT {and that doesn’t happen often}. Nothing has been changed from the original.
I have been using this recipe since I found it back in 2000… so lots of years of baking this Ranger Cookie! {THAT tells you something!} I love the chewy from the coconut and the crunch that the Special K cereal brings to the recipe.

You know me… I love to save money when I shop and here is how was I able to make this recipe cheaper than an everyday shopping trip. {And you can too!}
- Almost all my ingredients were purchased during the holiday baking sale and used coupons
- The chocolate morsels were bought at Walgreen’s during their sale and I used coupons and register rewards to get them for free
- C&H sugar will go on sale often for $1.99 and I can normally find a $.50 coupon to bring my out of the pocket price for a 4-pound bag, only $1.49
- I must admit that I bought the Special K cereal full price {and with a coupon —- shhh… don’t let too many people I did that but I didn’t have any in my stockpile}
- The coconut I bought generic since I didn’t have a coupon or sale {note: I forgot to check WinCo Foods to see how much it was there bulk as they have some great prices on baking ingredients.}

Ranger Cookies Recipe
Ranger Cookies

This cookie is the right amount of chewy and crispy rolled into one perfect cookie.
Ingredients
- 1 cup vegetable shortening
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 3 large eggs
- 1 1/2 teaspoon vanilla2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups quick-cooking rolled oats
- 2 cups Special K cereal
- 12 ounce bag semi sweet chocolate chips
- 1 cup sweetened flaked coconut
Instructions
- Preheat oven to 350°F.
- Beat together shortening, sugars, eggs, and vanilla with an electric mixer until light and fluffy.
- Sift together flour, baking soda and powder, and salt.
- Beat in flour mixture on low speed until just combined.
- Stir in oats, cereal, chips, and coconut.
- Drop rounded tablespoons of batter 2 inches apart on a baking stone or parchment-lined cookie sheet.
- Bake cookies, 1 sheet at a time, in the middle of the oven until golden brown, 15 to 18 minutes.
- Cool cookies on sheets for 1 minute, then transfer to a rack to cool completely.
