Are you tired of burning your knuckle hair when you roast peppers over an open flame? STOP! Bob’s method of roasting peppers is the easiest by far and while they are roasting, we can be doing something else in the kitchen.
We love recipes that call for roasted peppers and most of the time they will specify a red or an orange or a yellow pepper. Honestly, once they are roasted they taste the same so I always buy red peppers to roast since I can almost always find a good sale on them at the local grocery stores. {They are $1.48 each at my local Walmart and I have price matched them for as low as $.25 each.}
How to Roast Peppers
Line a baking sheet with aluminum foil to make your clean up easy once your peppers are roasted. Trust me… do this as they get a little juicy and then that seers the pepper to the pan.
Once they are roasted, place them in a bowl and cover with foil to “steam” the peel from the pepper. I add a plate or towel over mine to retain the heat. Once they are cooled, remove your covering and start separating the peel from the peppers. Bob will peel his under running water while I just peel them on my cutting board.
Our favorite way to eat roasted peppers is to use them in Roasted Pepper Bruschetta… YUM NON NOM.
