Sauteed Green Beans

Ah the green bean.. so many ways to prepare them. Do you steam, sautee, roast, deep fry, add to the slow cooker, or …?

With all the cooking variations for green beans there seem to be a theme of what goes well with them such as bacon, bacon, and bacon. What… my family doesn’t eat bacon {they do not know WHAT they are missing!}. Since Bob doesn’t eat bacon he is always playing around with other ingredients to make his unique and tasty.

It has all the basic ingredients Bob loves such as wine {had to put it first}, garlic, and shallots. Perfect additions for his sauteed green beans with an Italian twist.

Sauteed Green Beans

The recipe below is pretty much in tact {yep… Bob didn’t change up a recipe to fit his taste – imagine that!}. The only thing is that I removed the Parmesan crisps because they didn’t seem to fit theme for our dinner this night {and my photographs of them came out horrible! LOL}.

You can change this recipe up by adding small chunks of potatoes, mushrooms, eggplant, and more! Just get creative.

Sauteed Green Beans

Sauteed Green Beans

Ingredients

  • 1 1/2 pounds green beans, fresh & trimmed
  • 2 tablespoons butter, unsalted
  • 1 tablespoon olive oil
  • 3 large shallots, thinly sliced
  • 2 garlic cloves, minced
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup dry white wine
  • 2 tablespoons thinly sliced fresh basil
  • Salt and freshly ground black pepper

Instructions

  1. Cook the green beans in a large pot of boiling water until just crisp-tender {about 3 minutes}
  2. Drain and rinse in ice water to stop them from cooking
  3. Drain well; set aside
  4. Melt the butter and oil in a heavy, large skillet over medium heat
  5. Add the shallots and garlic to the pan and saute until tender {about 2 minutes}
  6. Add the tomatoes and cook until heated through {about 3 minutes}
  7. Add the Italian seasoning and blend well
  8. Add the green beans and cook until the juices evaporate and the beans are almost tender, stirring often {about 10 minutes}
  9. Stir in the wine and basil
  10. Simmer 2 minutes longer
  11. Season with salt and pepper, to taste
