Slow Cooker Rotisserie Chicken
I have to admit, I prefer to buy the rotisserie chicken at Costco because it’s cooked to perfection AND it’s cheap! You can’t buy a whole chicken for the price of a Costco chicken unless it’s a really small bird or it’s on clearance. I THINK the price is the same across the US at $4.99 per chicken.
Since I am doing a food series for the holidays, I am trying to find meats other than turkey that can be cooked and enjoyed for the holidays so I decided to share my recipe for slow cooker rotisserie chicken.
Now, I make mine a smidge different and if you don’t want to use my exact ingredients you can easily substitute with others.
When I shop for meat I will normally go around 3 o’clock in the afternoon as that is when the butcher marks down the meat. This chicken above was priced at $5.58 and I saved $1.69, making it $3.89. It’s perfect as I normally cook the meats I buy this way the same name or early the next morning in the slow cooker. Ask your butcher what time they mark down the meat and try to shop around that time if you want to save.
A few variances and substitutions if you want:
- Regular paprika vs. smoked paprika
- Regular pepper vs. fresh coarse ground black pepper
- Regular salt vs Kosher / Sea salt
Note: I mix the Kosher salt into the rub mixture and then sprinkle the coarse ground sea salt over the top once the rub is on the chicken.
Once this bad boy is locked down in the slow cooker, you can concentrate on other dishes to prepare while it cooks.
This bird fed a family with 3 meat eaters (remember Bob is a vegetarian) and the cost of the chicken for $3.89 and the potato, which I price matched for $.25 per pound, was less than $4 total. Not too shabby for a quick, easy, tasty, reasonable priced meal.
