Tortilla Pinwheels
I decided to make Tortilla Pinwheels since my husband bought a HUGE pack of tortillas at Costco and then hit the road for three weeks. {What a waste if we don’t eat them!} Tortilla pinwheels are so easy to make and easy to eat – I love them!
If you read my article on my Pantry Cooking Challenge, you will see I am trying to clear out my pantry and fridge. Each night I will look to see what I have in both and pull together recipes that not only my family will eat — but hopefully yours too!
Tortilla Pinwheels
Right now in my pantry and refrigerator, I have an abundance of:
- Taco seasoning (free using coupons and register rewards at Walgreen’s)
- Tortillas (thanks Bob)
- Cream cheese (HUGE sale with coupons and we didn’t freeze it yet)
- Avocados, which I bought for $.07 each!
- Shredded cheese (nice sale and coupon and picked a lot of them up for $.98 a bag)
- Tomatoes (left over from our visit to Gilcrease Orchard)
- Canned beans (Nice sale with coupons – I used pacquito beans for this recipe)
Now note… I HATE black olives so the “7 layer dip” is missing olives. And… I thought we had spring onions (we ALWAYS have spring onions) and I couldn’t find a pack anywhere in my refrigerator. So I really made a 5 layer dip for mine (but they were still tasty!).
Tortilla pinwheels prep tips:
- Be sure to use a larger tortilla (if possible)
- Don’t add too many ingredients so they stay in a pinwheel shape
- Wrap in plastic wrap and chill – this helps set the ingredients and makes them easier to cut
I will be a few more tortilla pinwheels this week as we have a lot of cream cheese and … you guessed it… tortillas. So come back to see what I created out of my pantry. I see a bunch of dry Ranch dip mix in there and wondering how that will taste mixed with cream cheese. (If I don’t post that recipe you will know why I didn’t! LOL)

Tortilla Pinwheels
Tortilla Pinwheels

Ingredients
- flour tortillas
- 8 oz cream cheese, room temperature
- 1 teaspoons taco seasoning {adjust to taste}
- 1 can refried beans
- cheese, shredded
- avocados, diced
- tomatoes, diced
Instructions
- Mix the taco seasoning with the cream cheese until blended well
- Spread a thin layer of the cream cheese mixture onto tortilla
- Add a thin layer of beans
- Lightly sprinkle shredded cheese, avocado and tomatoes
- Roll the tortilla into a roll and wrap in plastic wrap
- Refrigerate for at least 20 minutes
- Cut into 1" pieces
